So here's what you'll need:
3/4 cup all-purpose flour
2/3 cup unsweetened cocoa powder
1 teaspoon baking powder
1/8 teaspoon salt
1 cup granulated sugar
1/4 cup butter, melted
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/3 cup chopped candied cherries
1/4 cup semisweet chocolate chips
2 tablespoons confectioners sugar
Now that you have all your ingredients, here's what to do with it:
1. Preheat the oven to 350 degrees (F). Spray an 8-inch square baking pan with nonstick spray
2. Combine the flour, cocoa powder, baking powder, and salt in a large bowl. Combine the granulated sugar, butter, eggs, vanilla extract, and almond extract in another bowl. Add the sugar misture to the flour mixture; stir just until blended. Fold in the cherries and chocolate chips. Pour the batter into the baking pan.
3. Bake until a toothpick inserted in the center of the pan comes out almost clean, 28-32 minutes. Cool in the pan on a rack for 30 minutes. Cut into 16 bars. Remove from pan and sprinkle with the confectioners' sugar.
Now doesn't that sound yummy? And for only 141 calories! Now, I'm imagining all sorts of ways to change up this recipe; white chocolate chips instead of semisweet, different fruits, maybe nuts. Darn, now I've made myself hungry. :)
